Eggless Saffron Muffins. So yummy and easy to make!

A classic muffin flavored with the delicacy of saffron and cardamom.

This recipe yields about 6 delicious muffins and only requires one bowl to make. These muffins can be had as is or served with classic saffron buttercream.


  1. Flour: 1 cup
  2. Baking Powder: 1 teaspoon
  3. Oil: 1/4 cup
  4. Sugar: 1/2 cup
  5. Milk: 1/2 cup
  6. Vinegar: 1 teaspoon
  7. Saffron: 2 pinches
  8. Vanilla: 1 teaspoon

Steps to follow: 

  1. Preheat the oven to 180°C.
  2. In a bowl mix together flour, baking powder, sugar and saffron.
  3. Pour in oil, vinegar, milk and vanilla.
  4. Whisk the mixture to form a smooth batter.
  5. In a lined cupcake tray divide the mixture to make 6 cupcakes.
  6. Bake for 20-25 minutes until toothpick comes out clean.
  7. Allow to cool.
  8. Serve as is or with tea/coffee.
